Supreme Sauce

100g Butter
100g Flour
1/4 Finely Diced Onion
1 Clove
1 Bay Leaf
1L Hot Milk
TT Salt And White Pepper
  1. Melt butter in sauce pot. Add onion, bay leaf and clove and sweat the onion for a few minutes.
  2. Add flour to make a roux and cook for 2-3 minutes. Do not brown.
  3. Add half of the milk, stirring vigorously until smooth. Add remaining milk.
  4. Simmer for 5 minutes.
  5. Add seasoning and strain through china cap.

If sauce is with potatoes, add nutmeg if desired. If with fish add cayenne or chopped anchovies if desired.
