Nicoise Salad

100g Cooked Green Beans
100g Diced (1cm) Cooked Potatoes
Dash Tarragon
Dash Chervil
TT Salt
TT Pepper
30ml Vinaigrette Dressing
1 Leaf Lettuce
60g White Tuna
2 Anchovies Fillets
2 Ripe Olives
5ml Capers
3 Tomato Wedges
1/2 Quartered Hard Boiled Egg
1 Sprig Parsley
  1. Combine beans, potatoes, tarragon, chervil, salt, pepper and vinaigrette dressing and marinate for approximately 1 hour.
  2. Place marinated mixture on lettuce on plate. Arrange tuna, anchovies, olives and capers attractively on top and around.
  3. Garnish with tomato, egg and parsley.
