Turkey Melt With Apple Pepper Relish

Relish
3/4 Cup Chopped Apple
3/4 Cup Chopped Drained Roasted Red Bell Pepper
1/4 Cup Sliced Green Onions
1 T Red Wine Vinegar
1 T Olive Or Vegetable Oil
1/8 t Salt
1/8 t Cayenne Pepper
1/4 t Finely Chopped Fresh Garlic

Sandwich
4 Large Slices French Bread Or Italian Bread Lightly Toasted
8 t Mayo
2 Tomatoes
12 oz Thinly Sliced Cooked Turkey Breast
12 Slices Cheddar Cheese
  1. Stir together all relish ingredients in medium bowl. Set aside.
  2. Spread each bread slice evenly with mayonnaise.
  3. To assemble each sandwich, layer bread slice with 3 slices, tomatoes, 1/4 cup relish and 3 slices cheese.
  4. Heat broiler. Broil sandwiches 5 to 6 inches from heat until cheese is melted (1 to 2 minutes). Top with remaining relish.

*Yields 4 sandwiches.*

For the relish you can sub other peppers for the red peppers, I like to use a yellow pepper and a red pepper.

Instead of green onions you can use white onions, I like to wash them with a bit of cold water to bring their flavour down a little.

Instead of cheddar you can use other cheeses and melt them to mix in their flavours. I find a brie, bruschetta, and gouda mix to work really well. I like the jalapeno gouda really well.

I like to use the focaccia bread for this, and cut it into fours or eights. Cut the round focaccia bread in half horizontally and make the sandwich in the centre.

I layer it with butter, mayo, cheeses, meat, tomatoes as border, relish in the centre (I use lots of relish as I find it really makes the sandwich), some more cheeses, and then the top of the round focaccia bread.

I found making the relish in a Robo Coup or chopper of some sort greatly reduced my prep time.
