Potato Salad

3kg Potatoes
10 Hard Boiled Eggs
500g Medium Diced Celery
2 bunches Sliced Green Onions
500mL Mayo
300mL Sour Cream
100mL Red Wine Vinegar
100mL Dijon-Style Mustard
60g Chopped Fine Parsley
TT Salt and Pepper
  1. Boil potatoes in salted water until nearly cooked. Drain the potatoes, spread them on a sheet pan and stick them in the fridge until cool.
  2. Peel and cut the medium potatoes into medium or large dice.
  3. Peel and chop the eggs.
  4. Combine all ingredients and adjust the seasonings with salt and pepper.

*Yields 3 Kilograms.*

For potato salad you can add various products, such as red or/and green peppers, chives, or various things leftover in the fridge (nothing too old of course). You should think how it can add to the salad before adding it however, fruits would not work, and try to keep it a little colourful. Anything you add should probably be diced small, so it doesn't overpower the potatoes.
